No, The IS 340 is a guideline document to help us apply the law. The revised critical details have more tolerance than the previous document therefore y you can choose to leave your own critical details as they were, while knowing you have some in built tolerance.

It is a legal requirement that staff involved in a food environment are trained and/or supervised commensurate with their work activity. The responsibility for the supervision and training of staff lies with the proprietor of the food business.
